Bean Paste Baked Fish








































































































烹饪是一种很独特和个人的。没有人能够重复煮出一模一样的的味道。

一百种以上的原因都可以影响一道菜的味道,材料的新鲜,室内的温度,不同牌子的酱料,甚至是天气等等。


我的父母和祖母煮菜是都靠感觉,她们不用量杯,量勺。是的,她们只靠感觉。

以往我并不同意以上的说法,直到这一天我的一位外国朋友来我家做客,她告诉我,她对我曾经煮给她的一道菜念念不忘。她很想再次回味一下这味道。

我答应了她,从材料的新鲜,酱料的牌子,我依足了所有的步骤完成了这道菜。





我煮菜不靠感觉(因该是说,我的三脚猫功夫还不能靠感觉吧:)

对煮菜,我斤斤计较,分秒必争。

比如说一大匙的糖该加入多少的水才能得到适当的甜度。

怎样的火候,在多长的时间内就会烧掉多少的水分等等…










话说,我的朋友尝了那道菜之后告诉我说:boon, 不是这味道啊。

天。。。这怎么可能…

这对我来说是个打击啊。

我想不通原因何在。我可以肯定煮这道菜时我比任何时候都认真。


我有点不服气和懊脑,我怎能让朋友失望啊。TT





 或许和她的心情有关吧。

还记的上一次用餐时是和她亲人一起,大家有说有笑的,好不开心。

而这一次她自身重返到这儿掏金,三个多月了,一直找不着工作,身上的积蓄也快花光了,心情糟透。

当然心情也一百种原因的其中一种啊。











是的!没有人能够重复煮出一模一样的的味道。

因为,一百种以上的原因都可以影响一道菜的味道!

    喜欢烹饪的人,都对自己煮的菜很挑剔吧~
    看到uncle比妈妈还要妈妈的煮食精神,真的佩服你。

    人的心情,可以左右自己吃上菜肴的味道,也许是可能的。
    心情再坏,吃什么也没味,这时候错就并不在负责煮食的人的身上了:)

  2. I'm jz a random Malaysian studying in India who happened to come across ur blog, was looking for a way to make the proper egg floss for 奶油蛋丝虾.

    For this fish, i think u wanted to make 酱蒸鱼?
    Well, from ur pics, i suppose ur dish will taste like 蒜蓉蒸鱼。
    My suggestion, less garlic, more ginger, more taucu, chilies ur choice, sugar to balance the saltiness, n uhm...no margarine~
    Heat oil till almost smoking, tumis till u get some brown bits, the smell comes up, then pour in water.
    把原材水分炒掉,有了甘香,你的酱,就会多一份锅气。
    Then place it on the fish, steam/bake.

    I've made it quite a few times, main ingredient is ginger n taucu.
    Not sure if the same dish...but
